🥒🍅🧅 Cucumber Tomato Onion Salad
🧾 Ingredients (Serves 2–4)

1 large cucumber (or 2 small), thinly sliced

2–3 ripe tomatoes, chopped or sliced

½ red onion, thinly sliced (or sweet onion)

2 tbsp olive oil

1 tbsp red wine vinegar (or lemon juice)

Salt & black pepper to taste

Optional: ½ tsp dried oregano or Italian seasoning
🌿 Optional Add-Ins:

¼ cup crumbled feta cheese or mozzarella pearls

A few fresh basil or parsley leaves, chopped

1–2 tbsp chopped olives

Pinch of chili flakes for heat

Slice all the vegetables and place in a large bowl.

In a small bowl, whisk together olive oil, vinegar/lemon juice, salt, pepper, and oregano.

Pour the dressing over the veggies. Toss gently to combine.

Let sit for 10–15 minutes to allow flavors to meld (or refrigerate until ready to serve).
