Here’s a fresh, crunchy, and classic Cucumber Tomato Onion Salad — a super simple side dish that’s light, refreshing, and perfect for summer meals, BBQs, or a quick lunch. It comes together in just minutes and can be easily customized to your taste!


🥒🍅🧅 Cucumber Tomato Onion Salad

🧾 Ingredients (Serves 2–4)

  • 1 large cucumber (or 2 small), thinly sliced

  • 2–3 ripe tomatoes, chopped or sliced

  • ½ red onion, thinly sliced (or sweet onion)

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar (or lemon juice)

  • Salt & black pepper to taste

  • Optional: ½ tsp dried oregano or Italian seasoning


🌿 Optional Add-Ins:

  • ¼ cup crumbled feta cheese or mozzarella pearls

  • A few fresh basil or parsley leaves, chopped

  • 1–2 tbsp chopped olives

  • Pinch of chili flakes for heat


👨‍🍳 Instructions:

  1. Slice all the vegetables and place in a large bowl.

  2. In a small bowl, whisk together olive oil, vinegar/lemon juice, salt, pepper, and oregano.

  3. Pour the dressing over the veggies. Toss gently to combine.

  4. Let sit for 10–15 minutes to allow flavors to meld (or refrigerate until ready to serve).

  5. Taste and adjust seasoning before serving.


🥗 Serving Tips:

  • Great as a side for grilled meats, seafood, or pasta dishes.

  • Serve on toasted bread or pita for a simple bruschetta-style snack.

  • Add cooked chickpeas or quinoa for a more filling version.
