Cucumber Salad for Dinner

Here’s a light, refreshing, and super easy Cucumber Salad that’s perfect for dinner — whether as a crisp side dish or a cooling contrast to spicy or grilled mains.


🥒 Simple Cucumber Salad for Dinner

Ingredients (Serves 4):

  • 2 large cucumbers (English or Persian work best), thinly sliced

  • 1/4 small red onion, very thinly sliced

  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 3 tbsp white vinegar or apple cider vinegar

  • 1 tbsp olive oil

  • 1 tsp sugar or honey (optional)

  • Salt and pepper, to taste

  • Optional: 1/2 cup plain Greek yogurt or sour cream for a creamy version


🥗 Instructions:

  1. Prep the cucumbers:

    • Slice thinly (use a mandoline if you like it extra thin).

    • If desired, sprinkle with salt and let sit in a colander for 15–20 minutes to draw out excess water (for extra crunch). Pat dry.

  2. Make the dressing:

    • In a bowl, whisk together vinegar, olive oil, sugar (if using), salt, and pepper.

    • Stir in dill and red onions.

  3. Toss & chill:

    • Add cucumbers to the dressing and toss well.

    • Chill for at least 15 minutes before serving — longer is better to let flavors develop.

  4. Optional creamy version:

    • Stir in Greek yogurt or sour cream to the dressing for a creamy cucumber salad.


This pairs beautifully with grilled meats, fish, sandwiches, or Mediterranean dishes.
