🍍 CrockPot Pineapple Pork Loin

Ingredients:

  • 2–3 lb pork loin (not tenderloin)

  • 1 can (20 oz) crushed pineapple with juice

  • 1/3 cup brown sugar

  • 1/4 cup soy sauce (or coconut aminos)

  • 2 cloves garlic, minced

  • 1/2 tsp ground ginger (or 1 tsp fresh grated)

  • 1 small onion, sliced (optional)

  • Salt and pepper, to taste

  • 1 tbsp cornstarch + 1 tbsp water (for thickening, optional)


Instructions:

  1. Sear the pork (optional):

    • Season pork loin with salt and pepper.

    • Brown it on all sides in a skillet with a bit of oil (3–4 minutes per side). This adds flavor, but can be skipped if you’re short on time.

  2. Add to CrockPot:

    • Place sliced onion (if using) on the bottom of the CrockPot.

    • Set pork loin on top.

    • In a bowl, mix crushed pineapple (with juice), brown sugar, soy sauce, garlic, and ginger.

    • Pour mixture over the pork.

  3. Cook:

    • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until pork is tender and internal temp reaches 145Β°F (63Β°C).

  4. Thicken the sauce (optional):

    • Remove pork and let rest.

    • Pour the sauce into a saucepan. Bring to a simmer.

    • Stir in cornstarch mixed with water and cook until thickened (2–3 minutes).

  5. Serve:

    • Slice pork and spoon sauce over the top.

    • Great with rice, mashed potatoes, or roasted vegetables.

  • You can substitute pork loin with pork shoulder for a pulled pork version.

  • Add bell peppers or carrots to the CrockPot for extra flavor and color.
