π CrockPot Pineapple Pork Loin
Ingredients:

2β3 lb pork loin (not tenderloin)

1 can (20 oz) crushed pineapple with juice

1/3 cup brown sugar
-
1/4 cup soy sauce (or coconut aminos)

2 cloves garlic, minced
-
1/2 tsp ground ginger (or 1 tsp fresh grated)

1 small onion, sliced (optional)

Salt and pepper, to taste

1 tbsp cornstarch + 1 tbsp water (for thickening, optional)
Instructions:

Sear the pork (optional):

Season pork loin with salt and pepper.

Brown it on all sides in a skillet with a bit of oil (3β4 minutes per side). This adds flavor, but can be skipped if you’re short on time.

Add to CrockPot:

Place sliced onion (if using) on the bottom of the CrockPot.

Set pork loin on top.

In a bowl, mix crushed pineapple (with juice), brown sugar, soy sauce, garlic, and ginger.

Pour mixture over the pork.

Cook:

Cover and cook on LOW for 6β8 hours or HIGH for 3β4 hours, until pork is tender and internal temp reaches 145Β°F (63Β°C).

Thicken the sauce (optional):

Remove pork and let rest.

Pour the sauce into a saucepan. Bring to a simmer.

Stir in cornstarch mixed with water and cook until thickened (2β3 minutes).

Serve:

Slice pork and spoon sauce over the top.

Great with rice, mashed potatoes, or roasted vegetables.

You can substitute pork loin with pork shoulder for a pulled pork version.
