Crockpot Chicken Tortellini Soup –

Here’s a delicious and easy Crockpot Chicken Tortellini Soup recipe that’s creamy, comforting, and perfect for a hands-off meal:

Ingredients:

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for a lighter version)
  • 1 can (14.5 oz) diced tomatoes (optional, for added flavor)
  • 2 cups carrots, sliced (or use frozen carrots)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 package (9 oz) refrigerated or frozen cheese tortellini
  • 1 cup heavy cream (or half-and-half, or coconut milk for a dairy-free version)
  • 1/2 cup grated Parmesan cheese (optional, for extra richness)
  • Fresh parsley or basil (optional, for garnish)

Instructions:

  1. Prepare the Crockpot:
    • In the bottom of your slow cooker, add the chicken breasts, diced onion, minced garlic, chicken broth, diced tomatoes (if using), sliced carrots, dried basil, oregano, salt, and pepper.
    • Stir everything together to combine.
  2. Cook the Soup:
    • Cover the Crockpot and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.
    • Once the chicken is done, shred it using two forks directly in the Crockpot (or remove the chicken, shred it, and return it to the soup).
  3. Add the Tortellini:
    • About 30 minutes before serving, add the tortellini to the slow cooker and stir to combine.
    • Cover and cook on high for the last 20-30 minutes, or until the tortellini is tender and cooked through.
  4. Finish the Soup:
    • Stir in the heavy cream and Parmesan cheese (if using) until the soup becomes creamy and smooth.
    • Taste and adjust seasoning with more salt and pepper if needed.
  5. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley or basil, if desired. Serve hot and enjoy!

Tips:

  • For a Thicker Soup: Use less broth or add more cream for a richer consistency.
  • Add Veggies: You can throw in some spinach or kale about 10 minutes before serving for some extra greens.
  • Frozen Tortellini: If using frozen tortellini, you might need to adjust the cooking time, but they should still cook perfectly in about 20-30 minutes after adding them to the soup.
