Here’s a super easy, comforting Crockpot Chicken Dinner β€” a complete meal in one pot, with tender chicken, hearty vegetables, and flavorful seasoning. Perfect for busy weeknights or lazy weekends.


πŸ— Crockpot Chicken Dinner (Complete One-Pot Meal)

πŸ§‚ Ingredients:

  • Protein:

    • 4 boneless, skinless chicken breasts or thighs

    • Salt & pepper, to taste

    • 1 tsp garlic powder

    • 1 tsp onion powder

    • 1/2 tsp paprika

    • Optional: 1/2 tsp Italian seasoning

  • Veggies:

    • 1 lb baby potatoes (halved if large)

    • 3–4 large carrots, peeled & cut into chunks

    • 1 onion, quartered

    • 3–4 garlic cloves, whole or minced

    • Optional: 1 cup green beans (add in last hour)

  • Sauce/Flavor:

    • 1 cup chicken broth

    • 2 tbsp olive oil or melted butter

    • Juice of 1/2 lemon (optional, for brightness)

    • Fresh herbs (thyme, rosemary, or parsley) β€” optional but great!


⏱️ Instructions:

  1. Prep Chicken:

    • Season chicken with salt, pepper, garlic powder, onion powder, paprika, and Italian seasoning.

  2. Layer in Crockpot:

    • Add potatoes, carrots, onions, and garlic to the bottom.

    • Place seasoned chicken on top.

    • Pour in chicken broth and drizzle olive oil or melted butter over everything.

    • Add lemon juice and fresh herbs if using.

  3. Cook:

    • Low: 6–7 hours

    • High: 3.5–4 hours
      (Until chicken is fully cooked and veggies are fork-tender)

  4. Optional (Last Hour):

    • Add green beans or peas on top if using.

  5. Serve:

    • Plate chicken and veggies together.

    • Spoon some broth over everything, or thicken it slightly with a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for a light gravy.
