🍽️ Crock Pot Smothered Pork Chops

Ingredients:

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • 1 large onion, thinly sliced

  • 2–3 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup chicken broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt

  • 1 tbsp cornstarch + 1 tbsp water (optional, for thickening)

  • 2 tbsp oil, for browning (optional but adds flavor)


Instructions:

  1. (Optional) Brown the pork chops:

    • Heat oil in a skillet over medium-high. Sear pork chops 2–3 minutes per side until golden brown. This step adds depth of flavor but can be skipped if you’re in a hurry.

  2. Layer in the Crock Pot:

    • Place sliced onions and garlic on the bottom of the slow cooker.

    • Lay pork chops on top.

  3. Mix and pour sauce:

    • In a bowl, whisk together cream of mushroom soup, chicken broth, Worcestershire sauce, paprika, salt, and pepper.

    • Pour the mixture over the pork chops and onions.

  4. Cook:

    • Low for 6–7 hours

    • or High for 3–4 hours
      (until pork chops are tender and easily cut with a fork)

  5. (Optional) Thicken the gravy:

    • Mix cornstarch with water and stir into the Crock Pot during the last 30 minutes of cooking.

    • Let it simmer with the lid slightly ajar to thicken.

  6. Serve:

    • Over mashed potatoes, rice, or egg noodles with a spoonful of the onion gravy on top.

  • Use cream of chicken instead of mushroom.

  • Add sliced mushrooms or bell peppers for extra veggies.

  • Sub pork chops with chicken thighs for a similar smothered dish.
