🫓🧀 Crispy Flatbread with Brie, Cranberries & Toasted Walnuts

Ingredients:

  • 1 store-bought or homemade flatbread (naan, pita, or thin pizza crust work great)

  • 6 oz Brie cheese, sliced

  • 1/2 cup dried cranberries

  • 1/2 cup toasted walnuts, roughly chopped

  • 1–2 tbsp honey or maple syrup

  • Fresh thyme or rosemary sprigs (optional)

  • Olive oil, for brushing

  • Salt and pepper, to taste


🧑‍🍳 Instructions:

1. Preheat Oven:

  • Preheat your oven to 400°F (200°C).

2. Toast the Walnuts:

  • On a baking sheet, toast walnuts for 5-7 minutes until fragrant and lightly browned. Remove and set aside.

3. Prepare the Flatbread:

  • Place flatbread on a baking sheet.

  • Lightly brush with olive oil.

  • Arrange slices of Brie evenly over the flatbread.

  • Scatter dried cranberries and toasted walnuts on top.

  • Add a light drizzle of honey or maple syrup.

  • Sprinkle with a little salt and pepper.

  • Add fresh thyme or rosemary if using.

4. Bake:

  • Bake in the oven for about 10-12 minutes, or until the flatbread is crispy and the Brie is melted and bubbly.

5. Serve:

  • Slice and serve warm, drizzled with a little more honey if desired.

  • For extra texture, add a handful of fresh arugula or baby spinach on top after baking.

  • Swap walnuts for pecans or almonds if preferred.

  • Use a crispy thin flatbread for the best crunch.
