  • 12 oz wide rice noodles (fresh or dried)

  • 1/4 cup soy sauce

  • 2 tbsp fish sauce

  • 2 tbsp oyster sauce

  • 2 tbsp vegetable oil

  • 1/4 cup fresh basil leaves (preferably Thai basil)

  • 2 green onions, chopped

  • Lime wedges, for serving

1. Prep noodles:

  • If using dried noodles, soak or boil them until just tender (follow package instructions but undercook slightly). Drain and set aside.

2. Layer ingredients in crockpot:

  • Place chicken, bell pepper, snap peas, onion, and garlic in the slow cooker.

  • In a small bowl, mix soy sauce, fish sauce, oyster sauce, brown sugar, and chilis. Pour over the ingredients.

3. Cook:

  • Cover and cook on low for 3-4 hours until chicken is tender and flavors meld.

4. Add noodles:

  • Add the noodles and basil into the crockpot, gently toss to combine, and let cook for an additional 15-20 minutes to absorb flavors.

5. Crisp it up:

  • Heat vegetable oil in a large skillet or wok over medium-high heat.

  • Transfer the noodles and chicken mixture in batches, spreading it out to form a thin layer.

  • Cook undisturbed for 3-5 minutes until the bottom is golden and crispy. Flip and crisp the other side if possible (or just crisp the bottom).

  • Repeat for all portions.

6. Serve:

  • Garnish with chopped green onions and serve with lime wedges.
