🦀 Crispy Crab Cake Egg Rolls with Lemon Dip
🧂 Ingredients:
For the Crab Cake Filling:

1/2 lb lump crab meat (picked over for shells)

1/4 cup finely diced red bell pepper

1/4 cup finely diced celery

2 tbsp green onions, chopped

1/4 cup mayonnaise

1 egg
-
1 tsp Dijon mustard

1 tsp Old Bay seasoning (or Cajun seasoning)

1/2 tsp Worcestershire sauce

1/2 cup breadcrumbs (panko or regular)

Salt and pepper to taste
For the Egg Rolls:

10–12 egg roll wrappers

1 egg (beaten, for sealing)

Oil for frying (vegetable or canola)
🍋 For the Lemon Dipping Sauce:

1/2 cup mayonnaise

2 tbsp fresh lemon juice

1 tsp lemon zest
-
1 tsp Dijon mustard

1 small garlic clove, minced

Salt and pepper to taste
🔧 Instructions:
1. Make the Lemon Dip:

Whisk together mayo, lemon juice, zest, mustard, and garlic until smooth.

Season with salt and pepper.

Refrigerate until ready to serve (can be made a day ahead).
2. Prepare the Crab Cake Filling:

In a bowl, mix together crab meat, diced vegetables, mayo, egg, mustard, Worcestershire sauce, seasoning, and breadcrumbs.

Mix gently to avoid breaking up the crab too much. Chill 10–15 minutes to help the mixture firm up.
3. Assemble the Egg Rolls:

Lay an egg roll wrapper with a corner facing you (diamond shape).

Place 2–3 tablespoons of crab mixture in the center.

Fold the bottom point up over the filling, then fold in the sides, and roll tightly.

Brush the final edge with beaten egg to seal.

Repeat with remaining wrappers and filling.
4. Fry Until Golden:

Heat about 2 inches of oil in a deep skillet to 350°F (175°C).

Fry 3–4 egg rolls at a time until golden brown and crispy (about 3–4 minutes per side).

Drain on paper towels. Let cool slightly before serving.
Baking option: Brush rolls with oil and bake at 400°F (200°C) for 18–20 minutes, flipping halfway.
