Here’s a super satisfying recipe for Crispy Baked Zucchini Fries — crunchy on the outside, tender inside, and oven-baked to golden perfection. Great as a snack, side, or healthy alternative to French fries! 🥒✨


🧄 Crispy Baked Zucchini Fries

🛒 Ingredients:

  • 2 medium zucchini, cut into fries (about 3–4 inches long, ½ inch thick)

  • 2 large eggs

  • ¾ cup panko breadcrumbs (or crushed pork rinds for keto)

  • ¼ cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Salt and pepper, to taste

  • Optional: chopped parsley or Italian seasoning


👩‍🍳 Instructions:

1. Preheat Oven

  • Preheat to 425°F (220°C).

  • Line a baking sheet with parchment paper or a wire rack for extra crispiness. Lightly oil or spray it.

2. Prep the Dredging Station

  • In one bowl: beat the eggs.

  • In another: mix the panko, Parmesan, garlic powder, paprika, salt, and pepper.

3. Coat the Zucchini

  • Dip each zucchini fry into the egg, then press into the breadcrumb mixture until well coated.

  • Place them on the baking sheet in a single layer without crowding.

4. Bake

  • Bake for 20–25 minutes, flipping halfway, until golden and crispy.

  • If needed, broil for 1–2 minutes at the end for extra crunch.

5. Serve

  • Sprinkle with fresh herbs if desired.

  • Serve hot with marinara sauce, ranch, or garlic aioli.


✅ Tips:

  • Want it extra crispy? Use a wire rack on your baking tray to allow airflow under the fries.

  • Air fryer version: Cook at 400°F (200°C) for 10–12 minutes, shaking halfway.
