Here’s a classic French crepes recipe that’s thin, buttery, and perfect for sweet or savory fillings:


🥞 Classic Crepes Recipe

Ingredients:

  • 1 cup (120g) all-purpose flour

  • 2 large eggs

  • 1 ¼ cups (300ml) milk

  • 2 tbsp unsalted butter, melted (plus more for the pan)

  • 1 tbsp sugar (optional, for sweet crepes)

  • ½ tsp salt

  • 1 tsp vanilla extract (optional, for sweet crepes)


Instructions:

  1. Blend the batter:

    • In a blender or mixing bowl, combine flour, eggs, milk, melted butter, sugar (if using), salt, and vanilla (if using).

    • Blend or whisk until smooth. The batter should be thin like heavy cream.

    • Let it rest for at least 30 minutes (or refrigerate up to 24 hours) — this helps reduce bubbles and improves texture.

  2. Cook the crepes:

    • Heat a non-stick skillet (8–10 inches) over medium heat. Lightly grease with butter or cooking spray.

    • Pour in about ¼ cup of batter, swirling the pan immediately to coat the bottom in a thin layer.

    • Cook for 1–2 minutes, until the edges lift and the bottom is golden.

    • Flip and cook another 30–60 seconds on the other side.

    • Transfer to a plate and repeat with remaining batter, stacking crepes as you go.


Tips:

  • Keep cooked crepes warm under foil or in a 200°F (90°C) oven.

  • If the batter is too thick, add a splash of milk.

  • Nutella + strawberries

  • Lemon juice + sugar

  • Whipped cream + berries

  • Cinnamon + apples

Savory:

  • Ham + cheese + egg

  • Spinach + feta

  • Mushrooms + Gruyère
