Here’s a simple and delicious Crepes Recipe that you can make in no time! These thin, delicate pancakes are perfect for breakfast, brunch, or dessert. You can fill them with anything from fresh fruit and whipped cream to chocolate spread or savory fillings like ham and cheese.

Classic Crepes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk (whole milk works best for a creamy texture)
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tbsp granulated sugar (optional, for sweetness)
  • 1 tsp vanilla extract (optional, for a hint of flavor)
  • Pinch of salt

Instructions:

1. Make the Batter:

  • In a large bowl, whisk together the flour, eggs, milk, melted butter, sugar (if using), vanilla extract, and a pinch of salt.
  • Whisk until the batter is smooth and free of lumps. The batter should be thin and pourable. If it feels too thick, add a little more milk to thin it out.
  • Let the batter sit for 15-30 minutes. This helps the flour fully hydrate and results in more tender crepes. If you’re short on time, you can skip this step.

2. Heat the Pan:

  • Heat a non-stick skillet or crepe pan over medium heat. Lightly coat the pan with a small amount of butter.
  • Once the pan is hot, reduce the heat slightly to medium-low.

3. Cook the Crepes:

  • Pour about 1/4 cup of the batter into the center of the pan. Immediately swirl the pan in a circular motion to spread the batter evenly across the bottom of the pan in a thin layer.
  • Cook for about 1-2 minutes, or until the edges begin to lift and the bottom is lightly golden.
  • Flip the crepe carefully using a spatula (or toss it in the air if you’re feeling adventurous!) and cook for another 30 seconds to 1 minute, until lightly golden.
  • Remove the crepe from the pan and place it on a plate. Cover with a kitchen towel to keep warm while you cook the remaining crepes.

4. Serve:

  • Serve your crepes immediately with your favorite fillings or toppings.
    • Sweet options: Nutella, fresh berries, whipped cream, lemon and sugar, or maple syrup.
    • Savory options: Ham and cheese, sautéed mushrooms, or spinach and ricotta.

Tips & Variations:

  • For a smoother batter: If you have a blender, you can blend the ingredients for about 20-30 seconds for a super smooth batter.
  • Make ahead: You can make the crepes in advance and store them in the fridge (layer them with parchment paper to prevent sticking). Reheat them in a pan or microwave before serving.
  • Flavored Crepes: Add a bit of lemon zest, cinnamon, or cocoa powder to the batter for extra flavor.
  • Gluten-Free Option: Use a gluten-free flour blend in place of regular flour for a gluten-free version.
