Creamy Vanilla Pudding Recipe

Ingredients:

  • 2 ¾ cups whole milk
  • ½ cup granulated sugar
  • 2 large egg yolks
  • 2 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 ½ tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Whisk together dry ingredients: In a medium saucepan, whisk together the sugar, cornstarch, and a pinch of salt.
  2. Heat the milk: Gradually add the milk to the dry ingredients while whisking to combine. Place the saucepan over medium heat and cook, whisking constantly, until the mixture begins to simmer and thicken (about 5-7 minutes).
  3. Temper the egg yolks: While the milk mixture is heating, whisk the egg yolks in a separate bowl. Once the milk mixture is simmering, slowly ladle a small amount of the hot mixture into the egg yolks to temper them (this prevents the eggs from curdling). Whisk constantly while adding the hot milk. Once combined, pour the egg yolk mixture back into the saucepan with the rest of the hot milk.
  4. Cook and thicken: Continue to cook the pudding, whisking constantly, until it thickens to a custard-like consistency (about 2-3 more minutes). Be sure not to let it boil.
  5. Finish the pudding: Remove the saucepan from the heat and whisk in the butter and vanilla extract until smooth and creamy.
  6. Cool and serve: Pour the pudding into individual serving dishes or one large dish. Cover with plastic wrap (press it directly onto the surface of the pudding to prevent a skin from forming). Let the pudding cool to room temperature, then refrigerate for at least 2 hours before serving.
  7. Serve and enjoy: Top with whipped cream, fresh berries, or a sprinkle of cinnamon if desired.
