  • 1 lb (450g) large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)

  • 1 cup heavy cream

  • 1/3 cup grated Parmesan cheese

  • 1/2 tsp Italian seasoning

  • 1/4 tsp crushed red pepper flakes (optional)

  • 2 cups baby spinach

  • Salt and black pepper to taste

  • Fresh parsley or basil (for garnish)

1. Sear the Shrimp

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Season shrimp with salt and pepper.

  • Cook shrimp for 1–2 minutes per side, just until pink and opaque.

  • Remove shrimp from pan and set aside.

2. Make the Creamy Sauce

  • In the same skillet, add another 1 tbsp oil and sautΓ© the garlic and sun-dried tomatoes for 1 minute.

  • Lower heat to medium. Pour in the heavy cream, Parmesan, Italian seasoning, and red pepper flakes.

  • Stir and simmer gently for 3–4 minutes, until slightly thickened.

3. Add Spinach & Shrimp

  • Add the baby spinach and cook until just wilted (about 1 minute).

  • Return the shrimp to the pan and toss in the sauce.

  • Simmer everything together for 1–2 minutes until heated through.

4. Serve

  • Garnish with parsley or basil.

  • Serve over:

    • Pasta (fettuccine, linguine)

    • Rice or risotto

    • Mashed potatoes or cauliflower mash

    • Crusty bread
