🍲 Creamy Garlic Herb Chicken & Crispy Potato Pasta Bowl

Serves: 4 | Prep Time: 20 min | Cook Time: 30–35 min


🧂 Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts, sliced into cutlets

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • Salt & pepper to taste

  • 2 tbsp olive oil

  • Optional: 1 tbsp butter for finishing

For the Creamy Garlic Herb Sauce:

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 tbsp fresh parsley or basil, chopped

  • Salt & pepper to taste

For the Pasta:

  • 8 oz pasta (fettuccine, penne, or rigatoni work well)

  • Salted water for boiling

For the Crispy Potatoes:

  • 2 medium russet or Yukon gold potatoes, diced small

  • 1 tbsp olive oil

  • Salt, pepper, paprika (optional)

  • Fresh thyme or rosemary (optional)


🔪 Instructions:

1. Crisp the Potatoes:

  • Preheat oven to 425°F (or air fryer to 400°F).

  • Toss diced potatoes with olive oil, salt, pepper, and optional herbs/spices.

  • Roast or air fry for 20–25 minutes until golden and crispy, shaking halfway through.

2. Cook the Pasta:

  • Boil pasta in salted water until al dente. Reserve ½ cup pasta water. Drain and set aside.

3. Cook the Chicken:

  • Season chicken cutlets with garlic powder, Italian seasoning, salt, and pepper.

  • In a skillet over medium heat, cook in olive oil for 4–5 minutes per side, until golden and cooked through.

  • Optional: add 1 tbsp butter to pan for extra flavor at the end. Set aside and slice.

4. Make the Creamy Garlic Herb Sauce:

  • In the same skillet, melt 2 tbsp butter. Add minced garlic and sauté until fragrant (about 1 min).

  • Stir in heavy cream and chicken broth. Bring to a simmer.

  • Add Parmesan cheese, Italian seasoning, and chopped herbs. Stir until smooth and thickened (3–5 minutes).

  • Season with salt and pepper to taste.

5. Assemble the Bowls:

  • Toss pasta into the sauce and coat well. Add a splash of reserved pasta water if needed for extra creaminess.

  • Divide creamy pasta into bowls. Top with sliced chicken and a handful of crispy potatoes.

  • Add veggies like spinach, peas, or blistered cherry tomatoes to lighten it up.

  • Make it spicy by adding crushed red pepper flakes to the sauce.

  • Try sweet potatoes for a twist on the crispy topping.

  • Swap chicken for shrimp or tofu for variety.
