🍝🧄 Creamy Garlic Butter Chicken & Linguine in Alfredo Sauce
🕒 Total Time: 35–40 minutes
Serves: 4
🧂 Ingredients:
For the Chicken:
-
2 large boneless, skinless chicken breasts (or 4 thighs), sliced or pounded thin
-
Salt & pepper, to taste
-
1 tsp garlic powder
-
1/2 tsp paprika (optional)
-
2 tbsp olive oil
-
2 tbsp unsalted butter
-
3–4 cloves garlic, minced
For the Alfredo Sauce:
-
2 tbsp butter
-
3 cloves garlic, minced
-
1 1/2 cups heavy cream (or half-and-half for lighter version)
-
3/4 cup grated Parmesan cheese (fresh is best)
-
Salt & black pepper to taste
-
Pinch of nutmeg (optional, classic in Alfredo)
For the Pasta:
-
12 oz linguine or fettuccine
-
Salt for pasta water
-
Chopped parsley, for garnish
-
Extra Parmesan, for serving
🔪 Instructions:
1. Cook the Pasta:
-
Bring a large pot of salted water to a boil.
-
Cook linguine until al dente, according to package directions.
-
Reserve 1/2 cup pasta water before draining.
2. Cook the Chicken:
-
Season chicken with salt, pepper, garlic powder, and paprika.
-
In a large skillet, heat olive oil and butter over medium heat.
-
Add chicken and cook 4–5 minutes per side (until golden and cooked through).
-
Add garlic in the last minute of cooking.
-
Remove chicken and set aside to rest. Slice if needed.
3. Make the Alfredo Sauce:
-
In the same pan, melt 2 tbsp butter and sauté garlic for 1–2 minutes.
-
Pour in cream and bring to a gentle simmer.
-
Stir in Parmesan cheese and season with salt, pepper, and a pinch of nutmeg.
-
Simmer until sauce thickens slightly (5–7 minutes). Add pasta water a little at a time if it gets too thick.
4. Combine Everything:
-
Toss cooked linguine into the Alfredo sauce until coated.
-
Top with sliced garlic butter chicken.
-
Garnish with chopped parsley and extra Parmesan.
🍷 Serving Ideas:
-
Add steamed broccoli or sautéed spinach for a veggie boost.
-
Serve with garlic bread or a green salad.
-
A glass of white wine (like Chardonnay) pairs beautifully.
🔁 Variations:
-
Spicy version: Add red pepper flakes or blackened seasoning to the chicken.
-
Lighter version: Use half-and-half and less butter, and bulk it up with veggies.
-
One-pan method: Slice chicken and cook fully before adding cream directly to the same pan, then add pasta.
