Creamy Cucumber Shrimp Salad

Here’s a refreshing and delicious Creamy Cucumber Shrimp Salad—perfect for summer lunches, potlucks, or as a light dinner. It’s cool, crisp, and packed with flavor!


🥒🦐 Creamy Cucumber Shrimp Salad

Servings: 4
Prep Time: 15 minutes
Chill Time: Optional – 30+ minutes


🛒 Ingredients:

  • 1 lb cooked shrimp (peeled, deveined, tails removed; medium or small size works best)

  • 1 large cucumber, thinly sliced or diced (English or Persian preferred for fewer seeds)

  • ¼ red onion, thinly sliced (optional)

  • 2–3 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1 stalk celery, finely diced (optional for crunch)

  • Juice of ½ lemon

  • Salt & pepper, to taste

For the Creamy Dressing:
  • ½ cup sour cream (or Greek yogurt for a lighter version)

  • 2 tbsp mayonnaise

  • 1 tsp Dijon mustard (optional for a little zing)

  • 1 clove garlic, minced or grated

  • 1 tsp white vinegar or lemon juice

  • Salt & pepper, to taste


🔪 Instructions:

  1. Make the Creamy Dressing
    In a bowl, whisk together sour cream, mayo, mustard (if using), garlic, vinegar or lemon juice, salt, and pepper.

  2. Prepare the Salad

    • In a large bowl, combine cooked shrimp, cucumber, red onion, celery (if using), and dill.

    • Pour dressing over the top and gently toss to coat everything evenly.

  3. Chill (Optional)

    • Cover and refrigerate for 30 minutes to let flavors meld and for extra coolness.

  4. Finish & Serve

    • Add lemon juice and adjust seasoning before serving.

    • Garnish with extra dill or lemon wedges if desired.


🍽️ Serving Ideas:

  • Serve over butter lettuce, mixed greens, or in avocado halves

  • Delicious on crackers, toast, or in a croissant sandwich

  • Add hard-boiled egg or cherry tomatoes for variation
