Chicken Tetrazzini is a creamy, cheesy baked pasta dish made with tender chicken, spaghetti (or any long pasta), mushrooms, and a luscious cream sauce. It’s baked until bubbly and golden — a perfect family dinner or make-ahead casserole.


🛒 Ingredients

🐔 For the Main Dish:

  • 2–3 cups cooked chicken, shredded or cubed (rotisserie works great)

  • 12 oz spaghetti or linguine

  • 8 oz mushrooms, sliced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 tbsp butter

  • 2 tbsp flour

  • 1½ cups chicken broth

  • 1 cup heavy cream or half-and-half

  • 1 cup sour cream (optional for extra tang & creaminess)

  • 1½ cups shredded mozzarella or Swiss cheese

  • ½ cup Parmesan, grated

  • Salt, black pepper, and a pinch of nutmeg

  • Chopped parsley (for garnish)

🍞 Optional Topping:

  • ½ cup breadcrumbs

  • 2 tbsp melted butter

  • Extra Parmesan


👩‍🍳 How to Make It

  1. Preheat oven to 375°F (190°C). Grease a 9×13″ baking dish.

  2. Boil pasta until al dente. Drain and set aside.

  3. Sauté onions and mushrooms in butter until soft. Add garlic; cook 1 minute.

  4. Make a roux: Stir in flour, cook for 1 minute. Gradually whisk in broth and cream. Simmer until thickened.

  5. Stir in sour cream, cheeses, salt, pepper, and nutmeg. Mix until smooth.

  6. Combine chicken, pasta, and sauce in a large bowl. Mix until well coated.

  7. Transfer to baking dish. Top with breadcrumb mixture (if using).

  8. Bake uncovered for 25–30 minutes, until bubbly and golden on top.

  9. Let rest 5–10 minutes before serving. Garnish with parsley.
