Creamy Cheesecake

Here’s a classic Creamy Cheesecake recipe that’s rich, velvety-smooth, and utterly satisfying — just like you’d find at a top-notch bakery or New York deli.


🍰 Creamy Cheesecake

🕐 Total Time:

  • Prep: 25 minutes

  • Bake: 1 hour

  • Chill: 4–6 hours or overnight

  • Serves: 12 slices


🧂 Ingredients:

Crust:

  • Graham cracker crumbs: 1½ cups (about 12 full crackers)

  • Granulated sugar: 2 tbsp

  • Melted butter: 6 tbsp

Filling:

  • Cream cheese (full-fat): 4 blocks (8 oz each), softened

  • Granulated sugar: 1 cup

  • Sour cream: ¾ cup

  • Heavy cream: ½ cup

  • Eggs: 4 large

  • Vanilla extract: 1 tbsp

  • All-purpose flour: 2 tbsp (optional, for added stability)


🔪 Instructions:

1. Make the Crust:

  • Preheat oven to 325°F (163°C).

  • Mix graham cracker crumbs, sugar, and melted butter until evenly combined.

  • Press into the bottom (and slightly up the sides) of a 9-inch springform pan.

  • Bake for 10 minutes. Let cool while preparing filling.

2. Make the Filling:

  • Beat cream cheese in a large bowl on medium speed until smooth and fluffy (2–3 minutes).

  • Add sugar and mix until fully incorporated.

  • Mix in sour cream, heavy cream, and vanilla.

  • Add eggs one at a time, mixing gently after each. Don’t overmix (prevents cracks).

  • If using, sift in flour and mix just until combined.

3. Assemble & Bake:

  • Pour the filling over the cooled crust. Smooth the top.

  • Wrap the bottom of the pan in foil and place in a roasting pan.

  • Fill roasting pan with 1–2 inches hot water (water bath prevents cracking).

  • Bake at 325°F (163°C) for 55–65 minutes, until the edges are set and the center still has a slight wobble.

4. Cool & Chill:

  • Turn off oven, crack the door, and let cheesecake sit for 1 hour.

  • Remove from oven and let cool to room temperature.

  • Cover and refrigerate for at least 4 hours (preferably overnight).


🍓 Optional Toppings:

  • Fresh berries or berry compote

  • Chocolate ganache

  • Caramel drizzle

  • Lemon curd or fruit preserves

  • Whipped cream

  • Room temperature ingredients are key for a smooth filling.

  • Avoid overmixing to prevent too much air in the batter.

  • Water bath = creamy texture + fewer cracks.

  • Crack prevention: Let cool slowly and avoid sudden temperature changes.
