🥣 Creamy Alfredo Lasagna Soup
🧾 Ingredients:
For the Soup:

1 tablespoon olive oil

1 lb Italian sausage (mild or spicy), casings removed

1 small onion, diced

4 cloves garlic, minced

4 cups chicken broth

2 cups water
-
8 lasagna noodles, broken into pieces

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste
For the Creamy Alfredo Base:

3 tablespoons butter
-
3 tablespoons all-purpose flour
-
2½ cups half-and-half (or whole milk for a lighter version)

¾ cup grated Parmesan cheese

1½ cups shredded mozzarella cheese
Optional Garnishes:

Fresh parsley, chopped

Additional grated Parmesan

Ricotta dollop on top

Cook the sausage:
In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Remove excess grease if needed. -
Sauté the aromatics:
Add the diced onion and garlic to the pot. Cook until onion is soft and translucent, about 3-4 minutes. -
Add liquids and pasta:
Pour in the chicken broth and water. Stir in the Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil. -
Cook the lasagna noodles:
Add broken lasagna noodles to the pot. Reduce heat and simmer for 10-12 minutes, or until noodles are tender. -
Make the Alfredo sauce (in a separate pan while noodles cook):
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Slowly whisk in the half-and-half until smooth. Let it thicken slightly, then stir in Parmesan and mozzarella cheese. Stir until melted and smooth. -
Combine and finish:
Pour the creamy Alfredo sauce into the soup pot. Stir to combine everything and let it simmer for 2-3 more minutes until heated through. Adjust seasoning if needed. -
Serve:
Ladle into bowls and garnish with parsley, extra Parmesan, or a small scoop of ricotta.
