🍌 Cream Cheese Stuffed Banana Bread

Makes: 1 loaf (9×5-inch pan)


🧾 Ingredients:

For the Banana Bread Batter:

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 3 large ripe bananas, mashed (about 1 ½ cups)

  • ½ cup (1 stick) unsalted butter, melted and cooled

  • ¾ cup granulated sugar (can reduce to ½ cup for less sweet)

  • 2 large eggs

  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract


🔪 Instructions:


🔹 1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Grease and flour a 9×5-inch loaf pan or line with parchment paper.


🔹 2. Mix Dry Ingredients

  • In a medium bowl, whisk together flour, baking soda, and salt.


🔹 3. Make Cream Cheese Filling

  • In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy. Set aside.


🔹 4. Prepare Banana Bread Batter

  • In a large bowl, mix mashed bananas, melted butter, sugar, eggs, and vanilla until combined.

  • Gently fold in dry ingredients until just combined. Avoid overmixing.


🔹 5. Assemble

  • Pour half of the banana bread batter into the prepared loaf pan.

  • Spoon the cream cheese filling evenly over the batter.

  • Carefully spoon the remaining banana bread batter over the cream cheese layer, spreading gently to cover.


🔹 6. Bake

  • Bake for 60–70 minutes, or until a toothpick inserted into the banana bread layer (not the cream cheese) comes out clean.

  • If the top browns too quickly, loosely cover with foil halfway through baking.


🔹 7. Cool & Serve

  • Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
