Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup cooked bacon, crumbled (about 6-8 slices)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 ½ cups Doritos (any flavor, but Nacho Cheese works great), crushed into crumbs
  • 1 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1 tablespoon olive oil (for greasing the pan)

Instructions:

  1. Prepare the chicken:
    • Preheat your oven to 375°F (190°C).
    • Using a sharp knife, cut a pocket into each chicken breast. Be careful not to cut all the way through—just enough to create a space for the filling. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
  2. Make the filling:
    • In a medium bowl, mix the softened cream cheese, crumbled bacon, and shredded cheddar cheese (if using). Stir until well combined and smooth.
  3. Stuff the chicken:
    • Stuff each chicken breast with the cream cheese and bacon mixture. You can use toothpicks to secure the opening of the chicken breasts, or just tuck the edges in if it closes up on its own.
  4. Coat the chicken:
    • Place the crushed Doritos into a shallow bowl or plate. Roll each stuffed chicken breast in the crushed Doritos until it’s fully coated, pressing gently to make sure the crumbs stick.
  5. Bake the chicken:
    • Lightly grease a baking dish with olive oil and place the coated chicken breasts inside.
    • Bake the chicken in the preheated oven for about 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The Dorito crust should be golden and crispy.
  6. Serve:
    • Remove the toothpicks (if used) and let the chicken rest for a few minutes before serving. You can garnish with chopped green onions or fresh parsley for color.

Tips:

  • Add more flavor: Try adding some ranch seasoning or paprika to the cream cheese filling for extra flavor.
  • Make it spicy: Use a spicy flavor of Doritos (like Flamin’ Hot) or add a dash of hot sauce to the cream cheese mixture for some heat.
