Here’s a classic Cream Bun recipe — the kind that’s soft, fluffy, slightly sweet, and filled with lightly sweetened whipped cream. These are a nostalgic bakery treat, often dusted with powdered sugar and sometimes filled with jam too.


🥯 Classic Cream Bun Recipe

📏 Yield: 8–10 buns

⏲ Total Time: ~2.5 hours (including proofing and baking)


⭐ Ingredients

For the Buns:

  • 3 ½ cups (450g) all-purpose flour (plus more for dusting)

  • ¼ cup (50g) granulated sugar

  • 2 ¼ tsp (1 packet) active dry yeast

  • 1 tsp salt

  • ¾ cup (180ml) warm milk (about 110°F / 43°C)

  • ¼ cup (60ml) warm water

  • 1 large egg

  • ¼ cup (60g) unsalted butter, softened

  • 1 tsp vanilla extract

For the Filling:

  • 1 cup (240ml) heavy cream

  • 2 tbsp powdered sugar (or more, to taste)

  • 1 tsp vanilla extract

  • Optional: strawberry or raspberry jam

For Finishing:

  • Powdered sugar, for dusting

  • Optional: extra whipped cream for piping


🔪 Instructions

1. Make the Dough:

  • In a small bowl, mix warm milk, warm water, and yeast. Let sit 5–10 minutes until frothy.

  • In a large mixing bowl (or stand mixer), combine flour, sugar, and salt.

  • Add yeast mixture, egg, vanilla, and butter. Mix until a sticky dough forms.

  • Knead for 8–10 minutes (by hand or mixer with dough hook) until smooth and elastic. Add a little flour if too sticky.

  • Place dough in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled.

2. Shape the Buns:

  • Punch down the dough. Divide into 8–10 equal pieces.

  • Roll each into a smooth ball or oblong shape (like a hot dog bun).

  • Place on a parchment-lined baking sheet, spaced apart.

  • Cover and let rise again for 30–45 minutes.

3. Bake:

  • Preheat oven to 350°F (175°C).

  • Bake buns for 15–18 minutes, until golden brown on top.

  • Let cool completely on a wire rack.

4. Fill:

  • Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.

  • Slice each bun lengthwise down the middle (not all the way through).

  • Optionally, spread a little jam inside the bun.

  • Fill generously with whipped cream using a spoon or piping bag.

5. Serve:

  • Dust with powdered sugar before serving.

  • Best enjoyed fresh, slightly chilled or at room temperature.


💡 Tips & Variations

  • Custard Cream: Use pastry cream instead of whipped cream for a richer filling.

  • Rose or Orange Water: Add a few drops to the cream for a unique twist.

  • Make Ahead: Buns can be made the day before and filled just before serving.
