🍽️ Cracker Barrel-Style Meatloaf
Ingredients (Serves 6–8):
For the meatloaf:

2 lbs ground beef (preferably 80/20)

1 cup crushed Ritz crackers (about 1 sleeve)

1/2 cup finely diced onion

1/2 cup finely diced green bell pepper

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup milk
-
1 tsp salt
-
1/2 tsp black pepper
For the glaze:

1/2 cup ketchup
-
1/4 cup brown sugar
-
1 tsp yellow mustard
🔪 Instructions:

Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.

Make the meatloaf mixture:

In a large bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, cheese, salt, and pepper.

Mix gently with your hands or a spatula until just combined — don’t overmix.

Shape and bake:

Form the meat into a loaf shape and place it in the prepared pan or on the baking sheet.

Bake uncovered for 30 minutes.

Make and add the glaze:

While it bakes, mix together ketchup, brown sugar, and mustard in a small bowl.

After 30 minutes, remove the meatloaf from the oven and spread the glaze over the top.

Return to the oven and bake for 20–30 more minutes, or until the internal temp reaches 160°F (71°C).

Rest and serve:

Let the meatloaf rest for 5–10 minutes before slicing.

Serve with mashed potatoes, green beans, or your favorite Cracker Barrel-style sides.
