Ingredients:

  • 2 tablespoons butter

  • 1 medium onion, finely chopped

  • 2 stalks celery, finely chopped

  • 2 medium carrots, finely chopped

  • 3 cloves garlic, minced

  • 1/4 cup flour (for thickening)

  • 4 cups seafood stock (or chicken stock if seafood stock is unavailable)

  • 1 cup dry white wine (or you can substitute with more stock)

  • 1 cup heavy cream

  • 1/2 teaspoon paprika

  • 1/2 teaspoon Old Bay seasoning (or any seafood seasoning you prefer)

  • 1/4 teaspoon cayenne pepper (optional for a little heat)

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges, for serving

Instructions:

Step 1: Make the Seafood Stock (Optional)

  1. Prepare the Shrimp Shells:

    • If you’re making your own seafood stock, place the shrimp shells in a large pot with 4 cups of water. You can also add some vegetable scraps (like onion skins, carrot ends, and celery leaves) for added flavor.

    • Bring the water to a boil, then lower the heat and let it simmer for about 30 minutes to extract the flavors from the shells. Strain and discard the solids. This will make a flavorful homemade shrimp stock. If you’re short on time, you can use store-bought seafood stock instead.

Step 2: Cook the Vegetables

  1. Sauté the Veggies:

    • In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion, celery, and carrots, and sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

    • Add the garlic and cook for an additional 1-2 minutes.

Step 3: Make the Roux

  1. Add the Flour:

    • Stir in the flour and cook for about 2 minutes, until it becomes lightly golden. This will help thicken your bisque later.

Step 4: Add Liquids and Seasoning

  1. Add the Stock and Wine:

    • Slowly pour in the seafood stock (or chicken stock) and dry white wine while stirring to ensure there are no lumps from the flour. Bring to a simmer and let it cook for 10-15 minutes to allow the flavors to blend.

  2. Add Seasonings:

    • Stir in the paprika, Old Bay seasoning, cayenne pepper (if using), salt, and black pepper to taste. Adjust seasoning as needed.

Step 5: Blend the Bisque

  1. Blend the Soup (Optional):

    • If you like a smoother texture, use an immersion blender to purée the soup until it’s silky smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a blender in batches.

    • Return the soup to the pot after blending.

Step 6: Add the Seafood

  1. Cook the Shrimp and Crab:

    • Add the shrimp to the soup and cook for about 3-4 minutes, until they turn pink and opaque. Be careful not to overcook the shrimp.

    • Gently fold in the crab meat, making sure it’s evenly distributed throughout the bisque. Let the crab warm up in the soup for about 2-3 minutes.

Step 7: Add the Cream

  1. Stir in the Cream:

    • Pour in the heavy cream and stir to combine. Let the bisque simmer for another 5 minutes to thicken and become rich and creamy.

Step 8: Final Taste and Serve

  1. Adjust Seasoning:

    • Taste the bisque and adjust the seasoning as needed, adding more salt, pepper, or Old Bay seasoning to your liking.

  2. Serve:

  • Ladle the bisque into bowls and garnish with freshly chopped parsley. Serve with lemon wedges on the side for a fresh burst of citrus.
