🤠 Cowboy Meatloaf and Potato Casserole
Ingredients:
For the Meatloaf Layer:

1.5 lbs ground beef

1/2 cup breadcrumbs

1 egg
-
1/3 cup BBQ sauce (or ketchup)

1 tsp garlic powder

1 tsp onion powder
-
Salt & pepper to taste
For the Potato Layer:

3–4 cups mashed potatoes (homemade or prepared)

1/2 cup sour cream (optional for creaminess)

1/2 cup shredded cheddar cheese (optional)
Toppings:

1 cup shredded cheddar or Colby Jack cheese
-
1 cup French fried onions (like French’s)

Optional: chopped green onions or bacon bits for garnish
🔧 Instructions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Make the meatloaf base:

In a bowl, mix ground beef, breadcrumbs, egg, BBQ sauce, garlic powder, onion powder, salt, and pepper.

Press mixture evenly into the bottom of the baking dish.

Bake the meatloaf layer uncovered for 20–25 minutes, until it starts to brown and is almost cooked through.

Prepare mashed potatoes while meatloaf bakes. Stir in sour cream and cheese if using for extra flavor.

Spread mashed potatoes evenly over the partially baked meatloaf layer.

Top with cheese and sprinkle with fried onions.

Bake an additional 15–20 minutes, until cheese is melted and onions are golden.

Cool for 5–10 minutes before slicing and serving.
