Classic Cowboy Cookies Recipe
Ingredients:
-
1 cup (2 sticks) unsalted butter, softened
-
1 cup granulated sugar
-
1 cup packed brown sugar
-
2 large eggs
-
1 tsp vanilla extract
-
2 cups all-purpose flour
-
1 tsp baking powder
-
1 tsp baking soda
-
1/2 tsp salt
-
2 cups old-fashioned rolled oats
-
1 cup shredded sweetened coconut
-
1½ cups semi-sweet chocolate chips
-
1 cup chopped pecans or walnuts (optional)
Instructions:
-
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
-
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
-
Beat in the eggs, one at a time, then stir in the vanilla.
-
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the butter mixture until just combined.
-
Stir in the oats, coconut, chocolate chips, and nuts (if using).
-
Drop rounded tablespoons of dough (or use a cookie scoop) onto prepared baking sheets, spacing about 2 inches apart.
-
Bake for 10–12 minutes, or until edges are golden brown and centers are just set.
-
Let cool on baking sheet for 5 minutes before transferring to a wire rack.
Tips:
-
For chewier cookies, don’t overbake.
-
You can substitute raisins or dried cranberries for chocolate chips for a twist.
-
Freezes well: you can freeze the dough balls or baked cookies for up to 3 months.
