🤠 Cowboy Casserole
Ingredients:

1 lb ground beef

1 small onion, diced

2 garlic cloves, minced

1 (10.5 oz) can cream of mushroom soup

½ cup sour cream
-
1 (15 oz) can corn, drained (or 1½ cups frozen corn)

1½ cups shredded cheddar cheese, divided
-
½ tsp smoked paprika (optional)

Salt & pepper, to taste

1 (28–32 oz) bag frozen tater tots
Instructions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook the beef mixture:

In a large skillet, brown the ground beef over medium heat. Add onions and garlic; cook until softened.

Drain excess grease.

Stir in cream of mushroom soup, sour cream, corn, 1 cup of cheese, paprika, salt, and pepper. Mix well.

Assemble the casserole:

Spread the beef mixture evenly into the prepared baking dish.

Arrange tater tots in a single layer on top.

Bake:

Bake uncovered for 35–40 minutes, or until tater tots are golden and crispy.

Top with cheese:

Sprinkle the remaining ½ cup of cheese over the top.

Return to oven for 5–10 more minutes, until cheese is melted and bubbly.

Cool slightly and serve.
