Here’s a reliable and crowd-pleasing recipe for Company Chicken Casserole — creamy, cozy, and just indulgent enough to feel special without being fussy. It’s perfect for serving guests or making ahead for a comforting family dinner.


🍽️ Company Chicken Casserole

Ingredients:

  • 3 cups cooked chicken, shredded or chopped (rotisserie works great)

  • 2 cups cooked white or wild rice (or a mix)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • ½ cup mayonnaise (optional, for richness)

  • 1 cup shredded cheddar or Swiss cheese

  • ½ cup milk

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

  • 1 tsp dried parsley or thyme (optional)

For the Topping:
  • 1 cup crushed buttery crackers (like Ritz) or panko

  • 2 tbsp melted butter


Instructions:

1. Preheat Oven:

  • Set oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

2. Make the Filling:

  • In a large bowl, mix together chicken, rice, soup, sour cream, mayonnaise (if using), milk, cheese, and seasonings.

  • Stir until evenly combined.

3. Assemble the Casserole:

  • Spread the chicken mixture into the prepared baking dish.

4. Add the Topping:

  • Mix crushed crackers with melted butter.

  • Sprinkle evenly over the top of the casserole.

5. Bake:

  • Bake uncovered for 30–35 minutes, until hot and bubbly with a golden topping.

  • Assemble up to 24 hours in advance and refrigerate; bake 5–10 minutes longer if cold.

  • Freezes well — just thaw overnight in the fridge before baking.
