Here’s a classic, creamy, and comforting Company Chicken Casserole — the kind of dish that’s perfect for impressing guests or bringing to potlucks. It’s rich, satisfying, and easy to make ahead.


🍗 Company Chicken Casserole

Ingredients:

  • 3 cups cooked chicken, shredded or chopped (rotisserie works well)

  • 2 cups cooked rice (white or wild rice blend)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • ½ cup mayonnaise (optional, for extra creaminess)

  • 1 cup shredded cheddar or Swiss cheese

  • ½ cup milk

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper to taste

  • 1 cup buttery cracker crumbs (like Ritz) or crushed cornflakes

  • 2 tbsp melted butter


Optional Add-Ins:

  • 1 cup cooked broccoli, peas, or mushrooms

  • ½ tsp dried thyme or parsley

  • A few dashes of hot sauce or Worcestershire for depth


Instructions:

1. Preheat Oven:

  • Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.

2. Mix the Filling:

  • In a large bowl, combine chicken, rice, cream of chicken soup, sour cream, mayonnaise (if using), milk, cheese, and seasonings.

  • Stir in optional veggies or flavor boosters if desired.

3. Assemble:

  • Pour the mixture into the prepared baking dish and spread evenly.

4. Add Topping:

  • In a small bowl, combine cracker crumbs or cornflakes with melted butter.

  • Sprinkle evenly over the casserole.

5. Bake:

  • Bake uncovered for 30–35 minutes, until bubbly and golden on top.


📝 Make-Ahead Tips:

  • Assemble up to 24 hours in advance and refrigerate (add 10–15 minutes to bake time).

  • Freezes well before baking — thaw overnight in the fridge, then bake.


Serving Suggestions:

  • Pair with a crisp green salad, roasted green beans, or rolls.

  • Garnish with fresh parsley or a few grinds of black pepper.
