🥗 Carrot, Cucumber & Ginger Salad (Fresh & Zingy)
Ingredients:

1 large carrot, julienned or grated

1 cucumber, thinly sliced or julienned

1–2 tsp fresh ginger, finely grated

1 tbsp rice vinegar or lime juice
-
1 tbsp sesame oil (or olive oil)

1 tsp honey or maple syrup (optional)

1 tsp soy sauce (optional)
-
1 tbsp fresh cilantro or mint, chopped (optional)

Salt & pepper to taste

Optional: sesame seeds or chopped peanuts for crunch
Instructions:

Toss the carrot and cucumber in a bowl.

Whisk ginger, vinegar, oil, sweetener, and soy sauce into a dressing.

Pour over the veggies and toss well.

Chill briefly or serve immediately with garnishes.

🥤 Carrot Cucumber Ginger Juice (Detox Drink)
Ingredients:

2 carrots, peeled and chopped

1 cucumber, chopped

1-inch piece of fresh ginger, peeled

Juice of ½ lemon

½ cup water (or coconut water)
Instructions:

Blend all ingredients until smooth.
