Combine Them with Ginger for a Powerful

Combining carrot, cucumber, and ginger creates a powerful, refreshing, and health-boosting combo — ideal for salads, slaws, or drinks. Here’s how you can bring them together depending on what you’re aiming for:


🥗 Carrot, Cucumber & Ginger Salad (Fresh & Zingy)

Ingredients:

  • 1 large carrot, julienned or grated

  • 1 cucumber, thinly sliced or julienned

  • 1–2 tsp fresh ginger, finely grated

  • 1 tbsp rice vinegar or lime juice

  • 1 tbsp sesame oil (or olive oil)

  • 1 tsp honey or maple syrup (optional)

  • 1 tsp soy sauce (optional)

  • 1 tbsp fresh cilantro or mint, chopped (optional)

  • Salt & pepper to taste

  • Optional: sesame seeds or chopped peanuts for crunch

Instructions:

  1. Toss the carrot and cucumber in a bowl.

  2. Whisk ginger, vinegar, oil, sweetener, and soy sauce into a dressing.

  3. Pour over the veggies and toss well.

  4. Chill briefly or serve immediately with garnishes.

💡 Perfect as a side with grilled chicken, fish, or tofu.


🥤 Carrot Cucumber Ginger Juice (Detox Drink)

Ingredients:

  • 2 carrots, peeled and chopped

  • 1 cucumber, chopped

  • 1-inch piece of fresh ginger, peeled

  • Juice of ½ lemon

  • ½ cup water (or coconut water)

Instructions:

  1. Blend all ingredients until smooth.

  2. Strain (if desired) for a clearer juice.

  3. Serve cold, optionally over ice.
