Ingredients:

  • 2 1/2 cups sweetened shredded coconut (desiccated or flaked)
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

2. Mix the Wet Ingredients:

  • In a large mixing bowl, whisk together the melted butter, eggs, and vanilla extract until well combined.

3. Add the Dry Ingredients:

  • In a separate bowl, combine the shredded coconut, flour, sugar, salt, and baking powder.
  • Add the dry ingredients to the wet ingredients and mix until everything is well combined. The batter should be thick and sticky.

4. Scoop the Dough:

  • Using a spoon or cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 1 inch apart. If you like, you can gently shape them into small mounds with your fingers.

5. Bake:

  • Bake for 12-15 minutes, or until the coconut chewies are golden brown around the edges.

6. Cool:

  • Allow the coconut chewies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
