Cloud Cake

The Cloud Cake is a dreamy, ultra-light dessert that lives up to its name — soft, airy, and melt-in-your-mouth. It’s often a delicate sponge or chiffon cake paired with whipped cream or mousse-like fillings, sometimes compared to a Japanese-style cheesecake or a heavenly layered mousse cake.

Below is a vanilla cloud cake recipe that’s fluffy, light, and perfect as a show-stopping dessert.


☁️ Cloud Cake (Vanilla Dream Version)

Total Time: ~3 hours (with cooling)


🧁 Ingredients

For the Sponge Cake:

  • 5 large eggs, separated

  • ½ cup (100g) granulated sugar

  • ¼ cup (30g) cake flour (or sifted all-purpose flour)

  • ¼ cup (30g) cornstarch

  • ¼ tsp cream of tartar (or ½ tsp lemon juice)

  • ¼ tsp salt

  • 1 tsp vanilla extract

For the Cloud Cream:

  • 1 cup heavy cream

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • Optional: ¼ cup mascarpone or cream cheese for stability


🔪 Instructions

Step 1: Make the Sponge

  1. Preheat oven to 325°F (160°C). Line the bottom of a springform or round cake pan (8–9 inches) with parchment — no greasing the sides (this helps the sponge rise properly).

  2. Whisk egg yolks with half the sugar (¼ cup), vanilla, and salt until pale and thick.

  3. In a clean bowl, beat egg whites with cream of tartar until frothy. Gradually add remaining sugar and whip to stiff peaks.

  4. Sift together flour and cornstarch, and gently fold into the yolk mixture.

  5. Fold the whipped egg whites into the batter in 3 additions — be gentle to avoid deflating.

  6. Pour into pan and bake 35–40 minutes or until lightly golden and springy.

  7. Cool upside down (invert pan over a rack) to maintain height. Once cool, run a knife around the edge and release.


Step 2: Whip the Cloud Cream

  1. Beat heavy cream, powdered sugar, and vanilla (plus mascarpone, if using) until medium-stiff peaks form.

  2. Chill until ready to use.


Step 3: Assemble

  1. Slice the cake in half horizontally (optional for layering).

  2. Spread a thick layer of whipped cloud cream on top (and in the middle if layered).

  3. Dust with powdered sugar or decorate with berries or edible flowers.


🍓 Optional Flavor Ideas

  • Add a layer of lemon curd or strawberry jam between the cake layers.

  • Mix a spoonful of melted white chocolate into the whipped cream for a luxurious touch.

  • Flavor the cake with almond extract, matcha, or orange zest.
