Classic Meatloaf
Ingredients:
For the meatloaf:

2 lbs (900g) ground beef (80/20 recommended)

1 cup breadcrumbs (plain or Italian-style)

1/2 cup whole milk
-
2 large eggs
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 tbsp ketchup
-
1 tbsp Worcestershire sauce
-
1 tsp salt
-
1/2 tsp black pepper
-
1/2 tsp dried thyme (optional)

2 tbsp chopped parsley (optional)
For the glaze:

1/2 cup ketchup
-
2 tbsp brown sugar
-
1 tbsp apple cider vinegar or white vinegar

1 tsp Dijon mustard (optional)
Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with foil or parchment, or use a loaf pan.

Soften the breadcrumbs:

In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes to absorb.

Mix the meatloaf:

Add the ground beef, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and optional herbs to the breadcrumb mixture.

Mix gently with your hands or a spoon until just combined—don’t overmix, or it may become dense.

Shape and bake:

Form the mixture into a loaf shape on the baking sheet or press it gently into a loaf pan.

Bake for 40 minutes.

Add the glaze:

While baking, whisk together glaze ingredients.

After 40 minutes, brush the glaze evenly over the meatloaf.

Return to oven and bake for an additional 15–20 minutes, or until internal temp reaches 160°F (71°C).

Rest and serve:

Let meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or your favorite sides.
