Classic Creamy Macaroni Salad

Ingredients:

  • 2 cups elbow macaroni (or any pasta shape you prefer)
  • 1 ½ cups mayonnaise (use full-fat or light, depending on preference)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1 teaspoon sugar (optional, to balance the acidity)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika (for garnish, optional)

Vegetable Add-ins:

  • 1 cup celery, finely diced
  • ½ cup red bell pepper, finely diced
  • ½ cup red onion, finely diced
  • 2-3 hard-boiled eggs, chopped (optional, for extra creaminess and texture)

Optional additions:

  • ½ cup sweet relish or pickle relish (for a tangy twist)
  • 1 tablespoon fresh parsley or dill, chopped (for garnish and added flavor)

Instructions:

  1. Cook the Pasta:
    • Cook the elbow macaroni according to package instructions, usually for about 8-10 minutes, until al dente.
    • Drain the pasta and rinse it under cold water to stop the cooking process and cool it down quickly. Set aside to drain completely.
  2. Make the Dressing:
    • In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, and sugar (if using). Stir until smooth and well-combined.
    • Season with salt and pepper to taste. Adjust the mustard or vinegar if you prefer a tangier flavor.
  3. Prepare the Vegetables and Eggs:
    • Dice the celery, red bell pepper, and red onion into small pieces. If using, chop the hard-boiled eggs into small chunks.
  4. Combine the Salad:
    • Add the cooked macaroni, diced vegetables, and hard-boiled eggs (if using) to the bowl with the dressing. Stir gently to combine, making sure the pasta and vegetables are well-coated in the creamy dressing.
  5. Chill and Serve:
    • Cover the macaroni salad and refrigerate for at least 1 hour to allow the flavors to meld together.
    • Before serving, give it a quick stir, and garnish with a sprinkle of paprika and fresh parsley or dill if desired.
  6. Serve:
    • Serve chilled as a side dish with your favorite grilled meats, sandwiches, or as part of a picnic spread.

Tips:

  • Adjust Creaminess: If you prefer a lighter version, you can substitute part of the mayonnaise with Greek yogurt or sour cream.
  • Make Ahead: This salad can be made a day in advance to allow the flavors to meld even more.
  • Extra Crunch: Add in some chopped pickles, carrots, or even peas for additional texture and flavor.
