Cinnamon Roll Cheesecake is a rich, indulgent dessert that blends the gooey, spiced goodness of a cinnamon roll with the creamy, tangy smoothness of classic cheesecake. It’s perfect for holidays, brunches, or anytime you want to wow a crowd.


🍰 What Is Cinnamon Roll Cheesecake?

It’s usually made with:

  • A graham cracker or cinnamon roll dough crust

  • Cinnamon sugar swirl throughout the cheesecake batter

  • A creamy vanilla cheesecake layer

  • Often topped with cream cheese glaze or icing, like you’d find on cinnamon rolls


📝 Cinnamon Roll Cheesecake Recipe

Crust:

  • 1 1/2 cups graham cracker crumbs (or crushed cinnamon rolls or Biscoff cookies)

  • 1/4 cup sugar

  • 1/2 tsp cinnamon

  • 6 tbsp melted butter

Cinnamon Swirl Filling:

  • 1/2 cup brown sugar

  • 1 tbsp cinnamon

  • 2 tbsp flour

  • 3 tbsp melted butter

Cheesecake Batter:

  • 3 (8 oz) blocks cream cheese, softened

  • 1 cup sugar

  • 3 eggs

  • 1 tsp vanilla extract

  • 1/2 cup sour cream

  • 2 tbsp all-purpose flour

Cream Cheese Glaze (optional):

  • 4 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 1–2 tbsp milk

  • 1/2 tsp vanilla


🔪 Instructions:

  1. Preheat oven to 325°F (163°C). Line a springform pan with parchment and lightly grease the sides.

  2. Make the crust: Mix graham crumbs, sugar, cinnamon, and melted butter. Press into the bottom of the pan. Bake for 10 minutes and cool.

  3. Prepare cinnamon filling: Combine brown sugar, cinnamon, flour, and melted butter until paste-like.

  4. Make cheesecake batter:

    • Beat cream cheese until smooth.

    • Add sugar, mix well.

    • Add eggs one at a time, then vanilla, sour cream, and flour. Don’t overmix.

  5. Layer cheesecake:

    • Pour half the batter into the crust.

    • Drop spoonfuls of cinnamon filling and swirl with a knife.

    • Add the rest of the cheesecake batter and repeat cinnamon swirl on top.

  6. Bake: Place pan in a water bath. Bake for 60–70 minutes, until the edges are set and center jiggles slightly.

  7. Cool: Turn off oven, crack the door, and cool cheesecake in the oven for 1 hour. Then chill in the fridge for at least 4 hours or overnight.

  8. Glaze: Whisk cream cheese glaze ingredients until smooth and drizzle over the chilled cheesecake before serving.

  • Serve chilled or at room temperature

  • Pair with hot coffee or chai tea

  • Add chopped pecans for texture
