CHOCOLATE PECAN TURTLE CLUSTERS

Here’s a simple recipe for Chocolate Pecan Turtle Clusters—a sweet treat that combines the richness of chocolate, the crunch of pecans, and the smoothness of caramel!

Ingredients:

  • 1 cup pecan halves (or pecan pieces if preferred)
  • 1 cup caramel bits (or wrapped caramels, unwrapped)
  • 2 tablespoons heavy cream (for melting the caramel)
  • 8 oz milk chocolate or semi-sweet chocolate chips
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Toast the pecans:
    • Preheat the oven to 350°F (175°C). Spread the pecan halves in a single layer on a baking sheet.
    • Toast the pecans in the oven for 5-7 minutes, or until lightly browned and fragrant. Stir occasionally to prevent burning. Once done, remove from the oven and set aside to cool.
  2. Make the caramel:
    • In a small saucepan over low heat, melt the caramel bits with the heavy cream, stirring frequently. If using wrapped caramels, unwrap them and melt with the cream in the saucepan.
    • Once smooth and fully melted, remove the caramel from the heat and stir in the vanilla extract if using. Set aside to cool slightly.
  3. Melt the chocolate:
    • In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring between each, until completely smooth and melted.
  4. Assemble the turtle clusters:
    • Line a baking sheet with parchment or wax paper.
    • Arrange the toasted pecan halves into clusters on the sheet, placing 3-4 pecans in a tight grouping (like the shape of a turtle).
    • Spoon a small amount of melted caramel over each cluster of pecans.
    • Drizzle the melted chocolate over the caramel-covered pecans, ensuring the clusters are well coated.
  5. Let the clusters set:
    • Allow the turtle clusters to cool at room temperature for about 30 minutes, or place them in the refrigerator for 15 minutes to speed up the setting process.
  6. Serve and enjoy:
    • Once the chocolate has hardened, your turtle clusters are ready to serve! Store any leftovers in an airtight container at room temperature or in the fridge for longer freshness.
