🍗 Chicken Stir-Fried with Onions

🧾 Ingredients:

300–400 g (10–14 oz) boneless chicken (thigh or breast), thinly sliced

1 large onion, thinly sliced

2 tbsp oil (vegetable, peanut, or sesame)

2–3 garlic cloves, minced

1 tbsp soy sauce

1 tbsp oyster sauce (optional for umami)

1 tsp sugar (or honey)

½ tsp black pepper
-
1 tsp cornstarch (optional, for velveting)

1 tbsp water

Optional: green onions, sesame seeds, chili flakes

Marinate chicken (optional for tenderness):

Mix chicken with ½ tbsp soy sauce, cornstarch, and a splash of water. Let sit for 10 minutes.

Sear the chicken:

Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

Add chicken and stir-fry until browned and just cooked through (4–5 minutes). Remove and set aside.

Cook onions:

Add another tbsp oil. Stir-fry sliced onion until softened and lightly browned (3–4 minutes).

Add garlic and stir for 30 seconds until fragrant.

Combine and season:

Return chicken to the pan. Add remaining soy sauce, oyster sauce (if using), sugar, pepper, and a splash of water.

Stir well to coat everything in the sauce and cook another 1–2 minutes.
