CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH

Here’s a hearty, comforting, and low-carb Chicken, Spinach, and Mushroom Oven Bake — packed with protein, creamy flavor, and nutrient-rich veggies without the carbs. Perfect for keto, paleo, or weeknight meals!


🍗 Chicken, Spinach & Mushroom Low Carb Oven Dish

Serves: 4–6 | Prep Time: 15 min | Cook Time: 30–35 min


🧂 Ingredients:

  • 1½ lbs boneless, skinless chicken breasts or thighs, cubed or sliced

  • 2 tbsp olive oil or butter

  • 8 oz mushrooms, sliced (white or cremini)

  • 3–4 cups fresh spinach (or 10 oz frozen, thawed and drained)

  • 3 cloves garlic, minced

  • ½ small onion, finely diced

  • 4 oz cream cheese, softened

  • ½ cup sour cream or plain Greek yogurt

  • ½ cup heavy cream or half & half

  • 1½ cups shredded mozzarella or Monterey Jack cheese

  • ½ cup grated Parmesan

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • Optional: red pepper flakes or paprika for a kick


🔪 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Sauté mushrooms & aromatics:
    Heat 1 tbsp oil/butter in a skillet over medium heat. Add mushrooms and sauté until browned (5–7 min). Add onions and garlic, cook 2 more minutes. Remove from heat.

  3. Wilt spinach:
    Stir in fresh spinach and let it wilt from the residual heat. If using frozen, ensure it’s drained and mix it in now.

  4. Make the creamy base:
    In a large bowl, combine cream cheese, sour cream, and heavy cream. Stir in cooked mushroom-spinach mix, 1 cup shredded cheese, Parmesan, and Italian seasoning. Season with salt, pepper, and optional red pepper flakes.

  5. Add chicken:
    Toss raw cubed or sliced chicken into the creamy mixture and stir to coat. (Chicken will bake fully in the oven.)

  6. Bake:
    Transfer everything into the baking dish. Top with remaining ½ cup shredded cheese.
    Bake 30–35 minutes, or until chicken is cooked through and bubbly.

  7. Optional broil:
    Broil on high for 2–3 minutes for a golden cheesy top.


🍽️ Serving Suggestions:

  • Great with cauliflower rice, zucchini noodles, or a side salad

  • Store leftovers in the fridge for up to 4 days

  • Reheats beautifully in the oven or microwave
