Chicken Scarpariello — also known as “shoemaker’s chicken” — is a bold, zesty Italian-American dish that combines juicy chicken, sweet or spicy sausage, tangy peppers, and a punchy vinegar-wine sauce. It’s savory, slightly sweet, a little spicy, and full of rustic flavor.

🛒 Ingredients

  • Chicken thighs or bone-in breasts (bone-in, skin-on for flavor)

  • Italian sausage (sweet or hot, sliced or whole)

  • Bell peppers (red/yellow), sliced

  • Pickled cherry peppers (mild or hot), halved

  • Garlic cloves, minced or smashed

  • Onion, sliced

  • Dry white wine

  • Chicken broth

  • Red wine vinegar or white vinegar

  • Fresh rosemary or thyme

  • Olive oil, salt, pepper


🍳 How to Make It

  1. Sear the chicken in olive oil until golden brown. Remove and set aside.

  2. Brown the sausage in the same pan. Remove and set aside.

  3. Sauté onions, garlic, and peppers until softened and lightly caramelized.

  4. Deglaze the pan with white wine and a splash of vinegar, scraping up browned bits.

  5. Add chicken, sausage, cherry peppers, and herbs back to the pan. Pour in chicken broth to nearly cover.

  6. Simmer covered for 30–40 minutes, until chicken is tender and flavors meld.

  7. Optional finish: Remove lid and broil for 5 minutes to crisp up the top before serving.


🍽️ Serving Suggestions

  • With roasted potatoes, polenta, or buttered noodles

  • Garnish with chopped parsley and extra cherry peppers for punch

  • Crusty Italian bread is a must to soak up that sauce
