Chicken Pot Pie Casserole

Posted on April 6, 2025

Chicken Pot Pie Casserole is a cozy, comforting dish that combines the best parts of a classic chicken pot pie into a simplified casserole form. It’s packed with creamy chicken, vegetables, and a flaky biscuit topping, making it a perfect one-pan meal for any night of the week.

Here’s a recipe for a Chicken Pot Pie Casserole that’s easy to make and full of flavor:

Chicken Pot Pie Casserole Recipe

Ingredients:

For the Filling:

  • 2 cups cooked chicken, diced (rotisserie chicken works great!)

  • 1 1/2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)

  • 1/2 cup onion, chopped

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup sour cream (for extra creaminess)

  • 1/2 cup chicken broth (or more for desired consistency)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • Salt and pepper, to taste

For the Biscuit Topping:

  • 1 can (16 oz) refrigerated biscuit dough (flaky or buttermilk variety works best)

  • 2 tablespoons butter, melted (optional, for brushing on top)

  • 1/4 teaspoon garlic powder (optional, to sprinkle on top)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Make the Filling:

  • In a large skillet, heat a little oil or butter over medium heat.

  • Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant.

  • Add the frozen mixed vegetables and cook for another 3-4 minutes until the vegetables are heated through.

  • Stir in the cooked chicken, cream of chicken soup, sour cream, and chicken broth. Mix everything until well combined. Add thyme, parsley, and season with salt and pepper to taste. Let it simmer for a few minutes to thicken up.

3. Assemble the Casserole:

  • Pour the chicken and vegetable mixture into the prepared 9×13-inch baking dish, spreading it out evenly.

4. Prepare the Biscuit Topping:

  • Open the can of biscuit dough and separate the biscuits. Cut each biscuit into quarters and scatter them evenly over the top of the casserole mixture.

  • If you’d like a golden, crispy top, brush the melted butter over the biscuit pieces. You can also sprinkle a bit of garlic powder on top for extra flavor.

5. Bake the Casserole:

  • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through. You can check the biscuits by inserting a toothpick into one—if it comes out clean, the casserole is ready.

6. Serve:

  • Let the casserole sit for about 5 minutes before serving. This allows the filling to set and makes it easier to dish out.

  • Serve hot, and enjoy your delicious Chicken Pot Pie Casserole!

Tips for the Best Chicken Pot Pie Casserole:

  • Chicken: You can use shredded rotisserie chicken to save time, or you can cook some chicken breasts or thighs and dice them up.

  • Vegetables: Feel free to adjust the vegetables to your liking! You can use fresh or frozen vegetables—green beans, corn, and peas are classic choices. Some people even add mushrooms or potatoes.

  • Creamy Filling: If you want a thicker filling, reduce the amount of chicken broth or add a tablespoon of cornstarch mixed with water to the filling. Alternatively, if you like a looser filling, add more broth.

  • Make Ahead: This casserole can be made ahead of time! Simply assemble everything, cover tightly with plastic wrap or foil, and refrigerate. When you’re ready to bake, pop it in the oven and cook as instructed, adding a few extra minutes if needed.

  • Top Variations: You can swap the biscuit topping with puff pastry if you want a flakier top. Just make sure to adjust the baking time so it cooks through.

  • Cheese: For added richness, sprinkle some shredded cheddar cheese or parmesan on top of the filling before adding the biscuits, or mix it in with the filling itself.

Why This Chicken Pot Pie Casserole is So Great:

  • Easy to Make: Unlike traditional pot pie, this casserole skips the pie crust and makes it easier to throw together.

  • Comforting & Creamy: The combination of the creamy filling with the soft biscuits on top creates the perfect comforting meal.

  • One-Pan Meal: Everything bakes in one dish, making cleanup a breeze.

  • Flexible: This recipe is highly customizable to suit your tastes. Add or remove vegetables and spices, or switch up the type of meat for variety.

Chicken Pot Pie Casserole is the ultimate comfort food—creamy, savory, and satisfying with a buttery biscuit topping. It’s perfect for busy weeknights when you want a comforting homemade meal without all the fuss. Enjoy this hearty casserole with a side salad or just as it is!
