  • 2 large chicken breasts, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small onion, chopped

  • 1 cup heavy cream (or half & half)

  • 1/2 cup chicken broth

  • 1 cup grated Parmesan cheese

  • 8 oz pasta (penne, fettuccine, or your choice)

  • 1 cup spinach or cherry tomatoes (optional)

  • Fresh parsley or basil, chopped (for garnish)

1. Cook pasta:

Cook pasta according to package instructions until al dente. Drain and set aside.


2. Cook chicken:

Season chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken until golden and cooked through, about 5–7 minutes. Remove and set aside.


3. Make sauce:

In the same skillet, add onion and garlic. SautΓ© until softened and fragrant (~2 minutes).
Pour in chicken broth and heavy cream. Bring to a simmer.
Stir in Parmesan cheese until melted and sauce thickens slightly.


4. Combine everything:

Add cooked chicken and pasta to the sauce. Toss to coat evenly.
If using, stir in spinach or halved cherry tomatoes and cook until spinach wilts (~1 minute).


5. Serve:

Garnish with fresh herbs and extra Parmesan if you like. Serve warm.
