🧀🍗 Chicken Parmesan Grilled Cheese Sandwich

Ingredients (Makes 2 sandwiches):

  • 2 cooked chicken cutlets (breaded and cooked, store-bought or homemade)

  • 4 slices of bread (Italian, sourdough, or Texas toast work great)

  • 4 slices mozzarella cheese (or 1 cup shredded)

  • ¼ cup marinara sauce (plus more for dipping)

  • 2 tbsp grated Parmesan cheese

  • 2 tbsp butter (softened)

  • Optional: basil leaves, crushed red pepper flakes


🔧 Instructions:

1. Prepare the Chicken:

  • Use leftover breaded chicken, a frozen cooked cutlet (reheated), or make quick chicken tenders.

  • Slice cutlets to fit the bread if needed.

2. Assemble the Sandwiches:

  • Lay out 4 slices of bread.

  • On 2 slices, layer:

    • 1 slice mozzarella

    • Warmed chicken cutlet

    • Spoonful of marinara sauce

    • Sprinkle of Parmesan

    • 1 more slice mozzarella

  • Top with remaining bread slices.

3. Butter and Grill:

  • Spread butter on the outsides of the bread.

  • Heat a skillet over medium heat.

  • Grill sandwiches 3–4 minutes per side, pressing gently, until golden and cheese is melted.

4. Serve:

  • Slice in half and serve hot with extra warm marinara for dipping.
