Ingredients
For the Chicken:

1 small chicken breast (or 1 cup cooked shredded chicken)

Salt & pepper, to taste

1/4 tsp garlic powder

1/4 cup flour
-
1 egg, beaten
-
1/2 cup breadcrumbs (Italian-style or plain with seasoning)

2 tbsp grated Parmesan cheese
-
Olive oil, for pan-frying
For the Sandwich:

4 slices of thick bread (sourdough or Italian work great)

1/2 cup marinara or pizza sauce
-
1 cup shredded mozzarella (or slices)
-
2 tbsp butter (softened)
-
Optional: fresh basil or extra Parmesan for garnish
Instructions
1. Prepare the Chicken

Slice chicken breast thin or pound to even thickness.

Season with salt, pepper, and garlic powder.

Dredge chicken in flour β dip in beaten egg β coat in breadcrumbs mixed with Parmesan.

Heat olive oil in a pan and cook chicken until golden and cooked through (~3β4 minutes per side). Let rest, then slice or cut to fit your bread.
2. Assemble the Sandwich

Spread butter on the outside of each bread slice.

On the unbuttered side: layer mozzarella, chicken cutlet slices, a spoonful of marinara, more mozzarella, and top with the second slice of bread.
3. Grill the Sandwich

Heat a skillet over medium heat.

Place sandwiches buttered-side down and cook 3β4 minutes per side, pressing gently, until golden brown and cheese is melted.
