Easy Chicken Noodle Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth (store-bought or homemade)
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 1/2 cups egg noodles (or any pasta of choice)
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 1 teaspoon dried parsley (or 2 tablespoons fresh parsley)
  • Salt and pepper, to taste
  • 1 bay leaf (optional)
  • 1 tablespoon lemon juice (optional, for added brightness)

Instructions:

  1. Sauté the vegetables:
    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
  2. Add the garlic and seasonings:
    Stir in the minced garlic, thyme, parsley, salt, pepper, and bay leaf (if using). Cook for another minute until the garlic is fragrant.
  3. Add the broth and chicken:
    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 5 minutes to allow the flavors to meld together.
  4. Cook the noodles:
    Add the egg noodles to the pot and cook for about 7-9 minutes, or until the noodles are tender, according to package instructions. If you like your soup with more broth, feel free to add a little extra water or broth.
  5. Add the chicken:
    Once the noodles are cooked, stir in the shredded or diced chicken. Let the soup simmer for another 5 minutes to heat the chicken through.
  6. Finish with lemon juice (optional):
    For a touch of brightness, add the lemon juice and stir.
  7. Taste and adjust seasoning:
    Taste the soup and adjust the seasoning with more salt, pepper, or herbs as needed.
  8. Serve:
    Ladle the soup into bowls and serve hot. You can garnish with extra fresh parsley or a squeeze of lemon if desired.
