Ah, Chicken Noodle Soup — the ultimate comfort in a bowl. Whether you’re feeling under the weather or just want something warm and cozy, this classic dish hits all the right notes: savory broth, tender chicken, soft veggies, and slurpable noodles. Here’s a tried-and-true homemade version:


Classic Chicken Noodle Soup

Ingredients (Serves 4–6):

  • 2 tbsp olive oil or butter

  • 1 onion, chopped

  • 2–3 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 8 cups chicken broth (homemade or store-bought)

  • 2 cups shredded cooked chicken (rotisserie or poached)

  • 1 1/2 cups egg noodles or any small pasta

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • 1 bay leaf

  • Salt and pepper, to taste

  • Fresh parsley or dill, chopped (for garnish)

  • Optional: squeeze of lemon juice for brightness


Instructions:

  1. Sauté the veggies:
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until softened. Add garlic and cook for another minute.

  2. Build the broth:
    Pour in the chicken broth. Add thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce to a gentle simmer.

  3. Add noodles:
    Stir in the noodles and cook according to the package directions (usually 6–8 minutes), until tender.

  4. Add chicken:
    Stir in the shredded chicken and simmer for another 2–3 minutes until heated through. Remove the bay leaf.

  5. Taste and finish:
    Adjust seasoning with more salt, pepper, or a splash of lemon juice for brightness. Garnish with fresh parsley or dill.


Serve with:

  • Warm crusty bread

  • Grilled cheese

  • Crackers or toast


Tips:

  • Want it richer? Add a splash of cream or a pat of butter at the end.
