🍗 Chicken Meatballs
Ingredients:

1 lb ground chicken

1/4 cup breadcrumbs (or panko)

1/4 cup grated Parmesan
-
1 egg
-
2 garlic cloves, minced
-
1 tsp onion powder
-
1 tsp Italian seasoning (or parsley)

Salt & pepper to taste

Optional: 1–2 tbsp milk (if the mix feels too dry)
Instructions:

Preheat oven to 400°F (200°C).

In a bowl, combine all meatball ingredients. Mix gently — don’t overwork.

Form into 1.5-inch meatballs (about golf-ball size).

Place on a parchment-lined baking sheet.

Bake for 18–20 minutes, or until golden and internal temp reaches 165°F (74°C).
🥔 Potato Roses
Ingredients:

2–3 large Yukon Gold or Russet potatoes
-
2–3 tbsp melted butter or olive oil
-
Salt & pepper
-
Optional: garlic powder, thyme, rosemary, or Parmesan
Instructions:

Preheat oven to 400°F (if not already on).

Thinly slice potatoes into very thin rounds (~1/16 inch) using a mandoline or sharp knife.

Toss slices in melted butter/oil, salt, and seasonings.

Create roses:
-
Lay out 6–8 overlapping potato slices in a line.

Roll from one end to the other to form a rose shape.

Place each rose in a greased muffin tin to help hold shape while baking.

Bake for 30–40 minutes, or until edges are crispy and centers are tender.
🍽️ To Serve:

Plate 2–3 meatballs alongside 1–2 potato roses.

Drizzle meatballs with garlic butter, gravy, or marinara.
