Here’s a beautiful and delicious dinner idea: Chicken Meatballs with Potato Roses! It’s a showstopping combination of juicy, flavorful chicken meatballs paired with crispy, elegant potato roses — great for date night, dinner parties, or just elevating a weeknight meal.


🍗 Chicken Meatballs

Ingredients:

  • 1 lb ground chicken

  • 1/4 cup breadcrumbs (or panko)

  • 1/4 cup grated Parmesan

  • 1 egg

  • 2 garlic cloves, minced

  • 1 tsp onion powder

  • 1 tsp Italian seasoning (or parsley)

  • Salt & pepper to taste

  • Optional: 1–2 tbsp milk (if the mix feels too dry)

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, combine all meatball ingredients. Mix gently — don’t overwork.

  3. Form into 1.5-inch meatballs (about golf-ball size).

  4. Place on a parchment-lined baking sheet.

  5. Bake for 18–20 minutes, or until golden and internal temp reaches 165°F (74°C).


🥔 Potato Roses

Ingredients:

  • 2–3 large Yukon Gold or Russet potatoes

  • 2–3 tbsp melted butter or olive oil

  • Salt & pepper

  • Optional: garlic powder, thyme, rosemary, or Parmesan

Instructions:

  1. Preheat oven to 400°F (if not already on).

  2. Thinly slice potatoes into very thin rounds (~1/16 inch) using a mandoline or sharp knife.

  3. Toss slices in melted butter/oil, salt, and seasonings.

  4. Create roses:

    • Lay out 6–8 overlapping potato slices in a line.

    • Roll from one end to the other to form a rose shape.

    • Place each rose in a greased muffin tin to help hold shape while baking.

  5. Bake for 30–40 minutes, or until edges are crispy and centers are tender.


🍽️ To Serve:

  • Plate 2–3 meatballs alongside 1–2 potato roses.

  • Drizzle meatballs with garlic butter, gravy, or marinara.

  • Garnish with fresh parsley or microgreens for a fancy touch.
