Here’s a tasty Chicken Broccoli Alfredo Stuffed recipe that combines creamy Alfredo sauce, chicken, and broccoli, all stuffed into a delicious filling! This can be a satisfying main dish for dinner.

Chicken Broccoli Alfredo Stuffed Recipe

Ingredients:

  • 2 large chicken breasts (boneless, skinless)
  • 1 cup cooked broccoli florets (steamed or blanched)
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Heat the olive oil in a skillet over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
    • Cook the chicken breasts in the skillet for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let them rest for 5 minutes. Once cooled slightly, slice them into bite-sized pieces.
  2. Cook the Broccoli:
    • If using fresh broccoli, steam or blanch it in boiling water for 2-3 minutes until tender. Drain and chop it into small pieces.
  3. Make the Stuffing:
    • In a medium mixing bowl, combine the cooked chicken, chopped broccoli, Alfredo sauce, mozzarella cheese, and half of the Parmesan cheese. Stir until everything is well-coated.
  4. Stuff the Chicken:
    • Using a sharp knife, carefully create a pocket in the center of each chicken breast (be sure not to cut all the way through).
    • Stuff each chicken breast with the chicken and broccoli Alfredo mixture. You can use toothpicks to secure the open edges if needed.
  5. Bake the Stuffed Chicken:
    • Place the stuffed chicken breasts in a baking dish and sprinkle the remaining Parmesan cheese on top.
    • Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and the filling is hot and bubbly. The internal temperature of the chicken should reach 165°F (74°C).
  6. Serve:
    • Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley if desired, and serve hot.

Tips:

  • For extra flavor: You can add a little extra garlic or some Italian seasoning to the Alfredo sauce before mixing with the chicken and broccoli.
  • Make it lighter: Use a lighter version of Alfredo sauce or substitute the cream with a cauliflower-based Alfredo sauce for a healthier twist.
  • Add More Veggies: You can add mushrooms, spinach, or even sun-dried tomatoes for extra flavor and nutrition.
