Here’s a simple and delicious recipe for Chicken Breast Stuffed with Asparagus:


🐔 Chicken Breast Stuffed with Asparagus

Ingredients:

  • 2 large chicken breasts

  • 6–8 fresh asparagus spears (trimmed)

  • ½ cup shredded mozzarella (or Swiss cheese)

  • 2 tablespoons grated Parmesan cheese (optional)

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • ½ teaspoon paprika (optional)

  • Toothpicks or cooking twine

Instructions:

  1. Prep the Chicken:

    • Butterfly the chicken breasts: Slice each breast horizontally (without cutting all the way through) and open it like a book.

    • Season inside with salt, pepper, and minced garlic.

  2. Add the Filling:

    • Lay 3–4 asparagus spears in the center of each breast.

    • Sprinkle mozzarella (and Parmesan, if using) over the asparagus.

  3. Secure:

    • Fold the chicken over the filling and secure with toothpicks or tie with kitchen twine.

    • Season the outside with a bit more salt, pepper, and paprika.

  4. Cook:

    • Option 1: Pan + Oven

      1. Heat olive oil in an oven-safe skillet over medium-high heat.

      2. Sear chicken on both sides (2–3 minutes per side).

      3. Transfer to a 375°F (190°C) oven and bake for 15–20 minutes, or until internal temp reaches 165°F (74°C).

    • Option 2: Bake Only

      1. Place stuffed breasts in a baking dish.

      2. Drizzle with olive oil.

      3. Bake at 375°F (190°C) for 25–30 minutes.

  5. Rest and Serve:

    • Let the chicken rest 5 minutes before slicing.

    • Serve with a side of rice, mashed potatoes, or a fresh salad.
