Here’s a comforting and easy Chicken and Potato Bake recipe that’s a one-pan meal with tender chicken, creamy potatoes, and a deliciously savory seasoning. Perfect for a simple family dinner!

Chicken and Potato Bake

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or chicken breasts)
  • 4 medium-sized potatoes (Yukon gold or russet), peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (or fresh, if you have it)
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional, for extra flavor)
  • Fresh parsley (optional, for garnish)

Instructions:

1. Prepare the Oven and Baking Dish:

  • Preheat your oven to 400°F (200°C).
  • Grease a large baking dish with a little olive oil or cooking spray.

2. Season the Chicken:

  • In a small bowl, mix the garlic powder, onion powder, thyme, paprika, salt, and pepper.
  • Rub the chicken thighs (or breasts) with olive oil and then coat them evenly with the seasoning mixture.

3. Prepare the Potatoes:

  • Toss the cubed potatoes in a bowl with a drizzle of olive oil, a pinch of salt, pepper, and a little extra garlic powder or thyme if desired.
  • Spread the seasoned potatoes evenly around the edges of the baking dish, creating a bed for the chicken.

4. Arrange the Chicken:

  • Place the seasoned chicken thighs (or breasts) on top of the potatoes in the baking dish.

5. Bake:

  • Bake in the preheated oven for 40-45 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C) and the potatoes are tender. If you’re using bone-in chicken, the skin should be crispy and golden brown.
  • Optional: In the last 10 minutes of baking, sprinkle the grated Parmesan cheese over the chicken and potatoes for a cheesy, golden crust.

6. Serve:

  • Once everything is cooked through, remove from the oven and let it rest for a few minutes.
  • Garnish with freshly chopped parsley before serving if desired.

Tips:

  • Variations: You can add vegetables like carrots, bell peppers, or Brussels sprouts to the baking dish for extra flavor and nutrients.
  • Chicken: If you prefer boneless, skinless chicken breasts, that works as well! Just keep an eye on the cooking time, as boneless chicken cooks faster.
  • Crispier Chicken: If you want extra crispy skin, broil the chicken for the last 2-3 minutes of cooking time.
